You know, life, turn around and you will see it. Enough now…
I was craving for a cake for at least one month, I have witnesses. Today I had the idea to make a carrot cake because that was all I was talking about, but as it always turns out your fridge can surprise you.
I saw apricots, they were from France, my weak spot number one and my weak spot number two is my mom`s apricot cake. And since it is summer I decided to make something in season, we can eat carrot cake all year-long.
I could not remember exactly my mom`s recipe so here is mine.
You will need:
115 g. softened butter
1/2 cup brown sugar
3 large eggs, room temperature
1 tsp. vanilla extract
1 tsp. baking powder
1/2 cup buckwheat flour
1 cup white flour
100 g. natural yogurt
1 tbsp. chia seeds *
1 tbsp. shelled hemp seeds *
14 small apricots or 10 big ones in halves
those two are just for kicks , not a must
Preheat your oven to 170 C.
In a big bowl with an electric mixer or by hand corporate the butter with the sugar. When creamy enough add the eggs one by one and whisk until smooth. Add the yogurt and the rest of the ingredients , buckwheat flour , the white flour , backing powder , vanilla extract and the seeds if you are putting any.
When you dough is ready pour into a round baking pan and arrange the apricot halves on top.
At this stage you can vary some pans are bigger you may need more apricots or less.
Toss in the oven for about 35-40 min.
Let it cool completely and serve with a dollop sour cream if you fancy.
So this is my lighter version of my mom`s cake. If you need me to be politically correct this is not a real upside down cake , but today I did not feel like caramelising apricots, way to much sugar…
And one more thing, this cake was not only my favourite but it was my dog Max`s also. One beautiful day when I was 10, he ate the whole thing while I was getting a plate.
I can clearly remember I cried my eyes out , and I do not even like cakes so much.
So this is it, exactly how good this cake tastes.
