Beef & beetroot meatloaf

After changing the concept of this meal several times it came to meatloaf. If you are a regular guest at my kitchen you will know by now, that I very much dislike poor quality meat, and I try to make my own mince anytime I get the chance. Butchers are indeed pricy but one can get a good piece of meat these days in every big supermarket.
So I got my piece of beef and the thinking began. Five minutes later I got to work.



You will need:

300 gr. minced beef
150 gr. cooked and pureed beetroot
1 large egg
3,4 spring onions finely chopped
2 tbsp. Dijon mustard
3 tbsp. oats
Salt & pepper
Some herbs, in my case tarragon
splash of olive oil


Pre heat the oven to 180 C.
Line a loaf tin with baking paper. Take a large bowl and put all the ingredients in it. Mix them well together until corporated.
Put the loaf mix in the tin, drizzle little olive oil on it and toss in the oven for about 30 minutes.




And there is actually nothing more to say about this recipe. You can substitute the beetroot with zucchini, spinach, peas, sweet potato, pumpkin …the possibilities are endless.
You and your loved once do not have to eat boring food and be bored that you eat all the same stuff over and over again. Think of something exciting, it will be ready in minutes.
