Beetroot chocolate & zucchini poppy seed muffins

In a such big day for my own created family of two we cannot celebrate without 
something sweet.

The birthday of my husband was always a big deal for me, hiding presents inviting guest, cooking night and day.


As we got less younger he and I as well do not very much like our birthdays, but inspire of his annoyance I made some crazy tasting treats for him to giveaway at work.


So the treats.




It is not been unheard of veggies in a cake, for some reason I like to experiment in this direction a lot.


So again we are taking a different direction.



For the beetroot chocolate muffins you will need:



300 gr. cooked beetroot grated

100 gr. grated dark chocolate

4 small eggs or 3 big ones

1 pack baking powder

100 ml. vegetable oil

1 cup of sugar

2 cups of flour

2 tsp. vanilla extract 

50 gr. cocoa powder



So as previously said or wrote:

Combine all of the dry ingredients in one bowl, and the wet ones in another.

Stir together and do not over mix it.

Line the muffin forms with paper muffins cases or butter them.

Preheat oven 160 C.


Scoop and fill 3/4 of the cases with an ice scoop or a table-spoon.

Toss them into the oven for about 20 minutes or until a wooden stick inserted comes out clean.



After baking put them on a wire rack to cool.

This recipe made 19 full-blown muffins.



As we grow into the adult life together, me and my better half seemed to be pretty different.

And it has been pretty cool ride.



As we are I present you with two totally different tasting recipes.



Zucchini and poppy seed


You will need:


2 big zucchini peeled and grated

1 big apple grated

100 gr. melted butter

4 small or 3 big eggs

2 cups of flour

1 cup of sugar

1 pack of baking powder

50 gr. blue poppy seeds

pinch of cinnamon

1 tsp. vanilla extract


I will absolutely not going to annoy you with details, the steps are the same as above.

Only detail is that thanks to the zucchini high water consistency the batter will be a little thinner, so that calls for

175 C preheated oven


The recipe made 24 humble looking muffins.



Main idea if you are feeling adventures take the road with these.

You will be surprised what  taste senses you will awake by eating the crazy muffins.


I actually feel like one of these muffins combination of unusual tastes and ingredients putting a Woow at your face.

Different is not bad, it makes you feel special at least I feel special when around my special one.


So really enough of the sugary romance try it the worse what can happen is that you wasted one hour of your life and do not like the result.
