So first of all Brassica includes cauliflower, broccoli, romanesco broccoli, brussels sprouts and many more. Today I`m referring to broccoli, cauliflower and romanesco.
You can do this thing I experimented with and serve it as an appetizer or as a main course.
Basically I wrapped cauliflower and broccoli roses with bacon and pastry.
Put together a simple shortcut pastry
100 gr. cold butter
250 gr. flour
pinch of salt
splash of water
some black pepper
You can rub the butter in the flour, salt and herb, or you can grate it on a grater. Work the dough until you have a crumbly mixture, then add some water just a bit to help your dough come together. Wrap it in cling film and put it in the fridge to rest for half an hour.
Take apart your broccoli and cauliflower or whichever kind brassica you have, the brussels sprouts need only to be cleaned.
Take the dough from the fridge and cut some piece of it. Roll it with a pin in a round shape making sure it is very thin and can cover your veg.
Lay some bacon on the dough and put your veg on it. Close the parcel with two hands pressing good together making sure there are no wholes./In my case I was lucky the bacon I had been round shaped cut yours to fit in/
Do this with all of your veg until run out of dough or veg.
Pre heat the oven to 170 C and lay the parcel on baking paper. Put them in for about 25 min.
My goal was to have a crispy outside and still crunchy inside, it did not happen and me and my oven have still some work in getting to know each other.
But it was still good!
I realized that this is also a superb option for a picnic or beer garden outing, small snack and so on.
Again I`m not inventing something big but I think this is a different kind of view on Brassica, not the old boring style cooked in plain water and served with butter and lemon or even worse, gratinated.
If you have kids you may have had the veggie problem. This is a little funny idea to get them to eat veggies. Or of course this can refers also to adults which do not give a chance to vegetables.
