Stress, stress it is all around us…..Some people get burn out some not.
I advise you not to get in the stress mode , you are going to get sick , not a good deal.
A friend of mine asked me to bake something for her niece’s Christening. Of course all the bad karma came to me that day , almost made me insane….. Whatever, same stuff as usual, household drama, as always in the end everything worked really fine.
In the contrary of common sense that one should have at Christenings big fat creamy cakes, I played it differently out again.
I suppose the guests were shocked, but why not.
You will need:
4 big grated raw carrots
1 small apple grated
2 cups whole wheat flour
150 gr. brown sugar
2 tsp. baking powder
pinch of salt
2 tsp. cinnamon
1/2 cup coconut flakes
4 large eggs
1 cup vegetable oil
1 tsp. vanilla extract
about 30 marshmallows
Preheat the oven to 170 C
Whisk together by hand or mixer the eggs with the oil until fluffy then add the sugar . Stir in flour, salt, baking powder, cinnamon and vanilla.
Add the carrots and apple mix as well, at this stage you are practically ready but at first it will not look very yummy, don’t be scared it should look like this.
Line muffin pan with paper muffin cups.
This mix makes about 30 small muffins, if you are not in the mood for so many do half the ingredients.
Fill the cups with an ice-cream scoop evenly .
Bake for 15 – 20 minutes.
Pull out the pan and place one marshmallow on top of each muffin. Return the pan to the oven for 3 minutes or until the marshmallows are slightly melted but still fluffy.
Put them on a rack to cool and slightly press the marshmallow down, so it is almost even on the top.
This dessert I think is the perfect surprise and a way to con people who detest healthy food or do not want to give it a chance, it`s very neat trick.
Until they realize that something is wrong, they have already been eating the healthy muffin.
So give a chance to the new stuff, it tastes heavenly.
