Chickpea & parsley fritters

Fritters is really strongly said, do not make your conclusion so fast. And do not worry I have not converted to a chicken nuggets with ketchup kind of gal. 


Chickpeas are very high on protein and my family`s favorite, and the best part, you can buy them precooked in cans and always have some in your cupboard.


Basically you can make some delicious hummus or healthy stew with them or falafel, the possibilities are endless.


Today we are making fritters from them or from nothing-something.



You will need:


1 can 400 gr. chickpeas drained

a good bunch parsley

3 tbsp. milk

2 eggs

3, 4 tbs. flour

1 tsp. baking powder

salt, pepper

some oil




If you have a food processor your life could not be easier, but if you do not, it is not crucial, you just need to chop a lot.



In a big bowl put the chickpeas and mash them with a potato masher until they resemble a puree. Cut the parsley in small pieces and add it to the chickpeas, season well and stir with the eggs, milk,  flour and baking powder.


The consistency will be runny but do not worry it will come together.


Put a non stick pan on the heat and pour 1 tbsp. oil in it. 

Fry two tbsp. portions of the fritters mix in batches until golden from both sides.


Put the fritters on kitchen paper to drain the oil, if some.

In my experience if you have a good non stick pan you will need very little fat to fry.




So fritters or bakers or grillers, call them however you fancy. You can make these also with dill I imagine they will taste so fresh.


Now you have it – a light lunch or dinner story with only a couple of ingredients ready in no time, low fat and high protein.
