I`m making this recipe per request from my cousin, I think he has got excited about baking, I do not know from where but it is a great deal that a man cares about the food he puts in his body .
Very important for me, less important for others. So basically I’ll celebrate the eagerness of getting better and doing something different for the giggles.
I know pumpkin is practically out of season now, but I had one and you can easily substitute with cooked pear or apple if you want.
You will need:
2 cups of fruit puree like pumpkin, apple, pear
2 large eggs
1 1/2 cup whole wheat flour
1 tsp. baking powder
1/2 cup sugar
50 gr. butter room temperature
vanilla in every way that you have it at home
muffin forms or paper ones about 20 will do the trick
This is almost only a two-step recipe. Mix the dry ingredients together then whisk in all the wet ones, yes I know how does this sound.
Stir the mix until smooth.
Preheat oven on 160 C.
With an ice scoop put the mix in your muffin forms, do not fill them completely but something like 1/2 full .
Bake them for 35 – 40 minutes depending on your oven, or until when a stick inserted comes out clean.
And that is it.
You can buy guilt free canned fruit puree only when no sugar has been added or you can make it from a scratch, not so difficult just 15 minutes cooking fruit in water.
