Gooseberry streusel cake

Gooseberry is not so popular fruit in the area I grew up, but it was available to buy on the market. OK you buy it but what to do with it besides eat raw, as fruit by itself. 


I took an adventure of a kind and bought myself a couple of kilos gooseberries and tried out some stuff with them. Not everything was a catastrophe and I`m going to tell you today about the most successful one.




You will need:


500 gr. gooseberries 

200 gr. ground almonds

200 gr. whole wheat flour

100 gr. butter

150 gr. brown sugar

1 tsp. baking powder

2 tsp. vanilla extract





Pre heat the oven to 170 C.


To make the dough, just rub the butter in the flour and the rest of the dry ingredients – sugar, almonds, baking powder and vanilla. It should have a crumbly consistency.


Lay baking paper in a rectangle cake tin and put 2/3 of the crumble in it. Press down really well to make the base. Toss the gooseberries on the top and scatter. Sprinkle the rest of the crumbly dough over and press again.



Toss in the oven for about 40-50 minutes or until the top is brown and crispy and the juices from the gooseberries are bubbling around the edges.



And you are done.




Gooseberries are  unusually sour and acerbic, with other words this fruit is not everyone`s taste. But at the end of the day if you are not willing to try something new in the kitchen what about the rest of the things life is offering you.



In a few words a delicious summer tray bake done in minutes, with new and refreshing taste.
