Easy, fast and healthy food, is there something like this? When you come home to a semi empty fridge and you do not have any ideas it is time for some brainstorming.
If you plan your meals ahead, which is the better way to food shop and avoid the stress, you will normally have some chicken breast in the freezer. It is pretty easy to put something together with chicken, and this time like any time when I cook I wanted to make something different, but what?
Than I decided grilled.
One of the most important pan in my home is the griddle pan. You should invest good money in one, it is totally worth it. If you don’t want to invest a fortune buy a couple of cheap ones like I did before I realized that I spent more money for the shitty ones, then buy a good quality one. Whatever.
So grilled chicken breast:
500 gr. chicken breast
zest and juice from 1 lemon
2,3 garlic cloves
2 tbsp oil
Slice the breasts lengthwise, so you can help them cook faster. Put them in a bowl,pour the juice and the zest over, give them enough salt & pepper add the oil and the crushed garlic. Mix it well and let it rest for about ten minutes.
In the meantime.
broccoli cauliflower salad:
250 gr. broccoli
250 gr. cauliflower
100 gr. feta cheese
100 gr. tomatoes
2,3 tbsp linseed
some chopped nuts
oil,salt & pepper
Parboil the veg in salted water for just two minutes, or until the broccoli becomes greener. Let them cool for a bit. Cut your tomatoes and cheese,put them in a bowl. Cut cauliflower and broccoli into florets and add them in the bowl. Sprinkle over the linseed and the nuts ,add salt,oil and pepper. Add the cheese on the top.
Put your griddle pan on the stove and preheat. When ready grill the meat for about 5,6 minutes depending from the thickness.
/if you do not have a griddle pan,you can do this in a normal non stick frying pan/
The recipe serves three greedy people or four, on a diet,people.
