Grilled veg and salmon spaghetti

 

I do not know a person who does not like spaghetti meat balls. To be politically correct there is no such Italian recipe. The rule is the heavier the sauce, the whiter the pasta. Hence – there is no Spaghetti Bolognese recipe either. But whatever I`m not going to spoil your fun by just stating facts.

Main idea when you think spaghetti – you think minced meat, but not today, not in my household.

I admit for this one you should really have an hour or so to get it done, but in my opinion it is worth the effort.

 

You will need:

250 gr. salmon filet

200 gr. mushrooms

200 gr. marinated artichokes

2 big red onions

1 tin tomatoes 314 ml.

2 garlic cloves crushed

some rosemary, salt and pepper
some oil

200 gr. spaghetti if you are really hungry take more

 

 

So first and foremost put your grill pan on the stove to heat up. Next to it put the canned tomatoes in a pot with the garlic, the rosemary, salt, pepper and the oil. Close the lid and let the tomato sauce simmer.

The grilled veg:

Slice in thick pieces the onion and toss it on the grill. After you are done with it, grill the mushrooms and the artichoke, if you feel you need to, cut them a little after grilled. Last but not least brush with some oil the salmon fillet and toss it also on the grill and cut it eventually.
When you are done with the grilling put your kettle on to boil some water for the spaghetti.
Turn the heat up of the sauce and add the grilled stuff in it.

Preheat the oven to 180 C.
Boil your spaghetti as usual with some salt and oil in the water to prevent sticking together.
Take a big deep baking pan, I used my paella one, and mix the pasta with the sauce. Stir and put in the oven for 15 minutes.
And done.

 
So I want to explain myself. I should not have used spaghetti, because the sauce is really heavy but I obliged another rule and prevented a deadly sin in the Italian cuisine.
NEVER put cheese in a fish pasta. Of course I was doing it before I knew how serious the matters are. I was talking to an Italian about pasta and I told him that fact, he rolled his eyes on me and said something like Mio signore sei pazzo, like I said deadly sin.
