Lime pie



If you would like something vibrating in your brain you need to have lime pie.

It is different, not as the taste as I`m used to, but really good at the same time.


I watched several videos and read as many recipes for Key lime pie. I’m just making lime pie, because key limes are not in my region to buy, and also why do what the people tell you to do!



You will need:


5 limes skin grated and squeezed

1 pack evaporated milk 314 ml.

6 tbsp icing sugar

200 gr. oat cookies or digestive whichever you prefer

3 egg yolks

50 gr butter



First of all we are going top make the pie shell .

Preheat the oven on 160 C.

Melt the butter in a small pot and set aside. In a kitchen robot or by hand, if you have excessive energy, crush the cookies in crumbs . Mix the butter with the crumbs until they are moisten.

Press them on the bottom and the sides in a pie pan.


Bake for 10 minutes or until light brown, remove from oven and let it cool.


In the original recipes the filling is made with sweetened evaporated milk, I did not have such thing at home and I adapted the recipe so it can be made without it.


Take a small pot, put the milk and let it simmer not  boil. In a bowl whisk the egg yolks with the icing sugar until pale and fluffy. Slowly add the lime juice and the zest, whisk well.


When the milk is hot enough pour in the egg mix and start stirring.

If you feel right you can put the heat on more, the result what we are searching for is a custard like consistency, but not too thick.


Pour the filling over the crust and bake until the filling is set. 



And done, chill for couple of hours and you are in the game.



OK in a few words this is not hard to make, it is very different and very tasty.
