One of these days I was wondering what to do with a piece of beef. Roast it? Stir fry it? And I decided mince it. But then what with it? I had a pack of puff pastry in the fridge, I almost always have one.
I struggled a little bit with these two ingredients and then I thought of something.
Mini meat pies.
You will need:
1 pack puff pastry, or one pack croissant dough, both work just fine
300 gr. minced beef
a handful mushrooms
flax seeds / btw. I`m constantly offering you to cook with the wild version linseeds-stupid me, really sorry for that/
salt and pepper
50 gr. soft cheese like camembert
some olive oil
I`m toying lately with puff pastry and now my ritual is to knead it before I start doing anything. So knead your pastry with the flax seeds, so you will have a flax seed puff pastry. Having said that you can have sesame seed pastry, almond pastry, hazelnut pastry, you name it.
After kneading the pastry roll it out and cut 12 squares of it.
Preheat the oven to 170 C.
Chop in a very small the onion, the carrot and the mushrooms. Toss them in a frying pan with some oil and add the minced beef. Fry the filling for 5 minutes and then add the salt, pepper, sesame seeds, 1 tbs. Dijon mustard and 1 tsp. honey. Stir well and take out of the heat.
Oh I completely forgot, you will also need a muffin tin, if you do not have it, it will be tricky.
Take your muffin tin and lay the 12 pieces of pastry in it and fill the pies with the beef.
Toss in the oven for 25-30 minutes.
Shorty before you think they are done cut your cheese in 12 and put some on the top of the pies, return back in the oven until melted.
I most certainly forgot how to write but I`m going to do better next time.
So the main idea is these are perfect for dinner parties and picnics and lunch boxes.
And the best in it, all ingredients are optional you can make it with fish or veg your choice, but I will tell you one for sure the taste is divine. And they look pretty cute.
