Pear muffins

Yes I`m alive and kicking …..Since I got older, I found myself with less time than ever before.


But happy to report I found at last sweetened evaporated milk in a store,  do not need to order online.And now I`m trying out some recipes with it.


For my birthday I made 30 muffins to treat my colleagues, of course the kick under the belt was that they were very healthy, no one understood.

Obviously I mastered the under cover healthy food.



If you are interested you will need



4 middle sized pears grated

3 large eggs

1 1/2 cups  white flour

2 cups whole wheat flour

50 gr. butter softened

3 tsp. baking powder

vanilla extract

379 ml. can evaporated sweetened milk

150 ml. milk

1 cup of brown sugar

150 gr. dried fruit and nut mix for the tops



Preheat oven 160 C.

With this ingredients quantity you will make 30 muffins, if not so greedy today cut the recipe in half.

Line  a muffin pan with some paper muffin forms.



As usual or as in any muffin recipe combine the dry ingredients in a bowl mix well and set aside.

In a separate bowl mix together all of the wet ingredients until corporates.

Add to the wet the grated pears and gradually add some of the dry mix,  do not over mix it, it needs only to get together.


If you have an ice scoop use it to fill the forms, if not use two big spoons.Leave some room do not fill them up to the edge,  because you don`t want to have the muffin effect /also the muffin effect can be observed in some women, not so pretty picture at all/


Sprinkle on the tops some dried fruit & nut mix and toss them in the oven for 18-20 minutes.


If you are doing the whole recipe it will take triple the time, because the usual muffin pan has only 12 wholes, but  so be it.
