Pistachio cranberry cake

I`m seriously experiencing some memory loss problems, like most of you I imagine, or hope.


So, it happens very often in my household that the housewife cooks a splendid meal, becomes all the rewards ever know to man for it and then completely forgets how she made it.


Afterwards I`m wondering if I`m not constantly lying to you with the measurements, but here we are using memory reconstruction techniques and when they do not work, the only way is to cook it again and double check.


In today`s case it was like this.


After double checking you will need:



100 gr. butter

4 eggs

1 cup of sugar

2 cups flour

1 tsp. baking powder

150 gr. raw or roasted pistachios non salted

150 gr. dry or fresh cranberries

vanilla extract




As usual heat your oven to 170 C.


In a bowl mix butter and sugar, add one by one the eggs and beat until fluffy. Add the flour with the baking powder and mix until smooth.

Toss in the berries and the pistachios and stir. 

Pour the cake batter in a cake pan lined with baking paper and put in the oven for about 35-40 minutes.


This very simple cake is perfectly appropriate for tea or coffee time or whenever you fancy a sweet treat.

It is done in no time with no effort at all, the perfect example for no fuss cooking.
