It is almost the last batch zucchini for the year so I decided that I need to make something with them combined with another favorite veg of mine which is in season now – pumpkin.
I’m again on an inspirational journey and again as usual going completely mad in the markets and grocery’s. If I could I would have bought every single cheese variety they sell….
About the cheese, I actually decided to buy a book and educate myself, what is what and how it is done.
So I have bought locally, the very best you can do. Zucchini, pumpkin and a cheese that we already know and very much enjoy – a Comté. This is a variety of Gruyère which is actually a Swiss cheese. There are a lot of things to say about cheeses and here is not the place to discuss. In short if you have the chance try one of them, they are really good.
You will need:
300 gr. pumpkin ( I had Hokkaido but you can use any kind ) pre-boiled
2 small zucchini cut in circles
100 gr. Comté cheese grated or cut into small pieces
50 gr. Mimolette cheese cut in small
salt, pepper, mint
for the tart crust:
2 1/2 cups of flour
1 tsp. salt
1 tsp. sugar
150 gr. cold butter
1/2 cup cold water
Make the tart crust as usual, flatten it out, wrap it in a cling film and put it in the fridge for 30 minutes.
In the meantime boil the pumpkin.
Roll your crust out and lay in a tart dish. Arrange the pumpkin on the bottom, sprinkle over half of the cheese, season well. Lay the zucchini over the pumpkin and sprinkle the rest of the cheese on top.
Scatter the mint, pepper well and toss the tart in the oven for about 35-40 minutes in an oven on 180 C.

Cheese is something I can not live without and the little data list I made for myself I think I can try cooking with a different kind every day. But let me not overdo it. Cheese is very good for you, but fat is not. I do not wonder anymore why French and Italian men look like as they are in the last trimester…In short, if you catch yourself eating cheese and bread after dinner, you are most definitely in trouble. At least we are…
I’m going to brace myself and control the cheese eating, it would have been much easier if it were not so good. So make the small funny tart and eat your cheese like this otherwise it gets really dangerous.
