Roasted pumpkin rings

When I do a recipe many times and do not even come to the idea to write it down, I even cannot understand myself.
So I`m going to change instead of thinking of the other fancy shit I will write down my classics.
Only the Holly ghost knows what they are but, let me try.

We obviously eat  pumpkin very often, a friend of ours says it is now in trend and hates it, let us just say we are following the trend…

If you can find some small Hokkaido pumpkins it will be best for the recipe if not use whatever you did find.

1 bigger pumpkin or 2 small ones

400 gr. minced beef or minced lamb

1 big onion chopped in small

2 cloves of garlic chopped in small

handful mushrooms chopped

a bunch of mint leaves fresh or dried, salt, pepper, some oil

some soft cheese

If you have one bigger pumpkin slice it in  four rings and clean the seeds, if you have two smaller ones cut them in half and again clean the seeds.

Preheat the oven to 170 C.

In a pan sweat the onions, garlic and mince together.Add the mushrooms, season well and put the mint leaves roughly chopped.Stir well and leave on the heat for five minutes.

Lay your pumpkin slices in a baking tray and fill them with the mince mix.Put on the top some cheese and toss in the oven for 20 minutes.

So in short if you enjoy lamb it will be a delight with the mint mixed in the business, if not delicious also with beef.Cheese is actually optional in this recipe, put it if you feel the need to.And other stuff, you can fill or stuff you pumpkin with various things like, bread crumbs, walnuts and Gorgonzola cheese, but this version is for the days you are smiling when you stepped down from
the scale.

Basically everything is possible you need only a little time and some inspiration.
