Sour cherry spicy muffins

Where I live now, there is a really big Christmas baking industry.


Shame on you people who buy instead of baking.You should not do fourteen different kinds of treats, you can do one or two, and they do not need to be super sophisticated either.


Fact is that there is nothing better than a home made Christmas treat. If you are willing to spare one hour of your life there is a lazy alternative, you will be surprised from the results.


 I really enjoy sour cherry spicy cake and I thought to myself for a larger crowd why not turn it into muffins.


Today you will need


600 gr. sour cherries frozen or in a glass


4 eggs


250 gr. butter room temperature


250 gr. yogurt


250 gr. brown sugar


400 gr. whole wheat flour


1 pack baking powder


15 gr. gingerbread seasoning if you cannot find it in the store make you own


2  tablespoons ground Cinnamon

1  tablespoons ground Cloves

1/2 teaspoon Nutmeg

1 teaspoon ground Coriander

1 teaspoon Cardamom

1 teaspoon ground Ginger


It makes more than you need, store the rest in an airtight spice glass.




Preheat the oven 170 C.

Line a muffin tin with paper cases, this recipe makes   24 muffins you can easily cut the recipe in half.


With an electric mixer or by hand mix the eggs, sugar,butter, spice,yogurt.Add the flour with the baking powder to the mix, add the cherries and stir well.


Divide the batter between the muffin cases and toss them in the oven for 20 minutes.





Take one hour from your time and watch the faces of your friends and family when they taste this Christmas in a paper case.Amazing and easy too.


So in conclusion before you buy your Christmas treats, think for a second, maybe you will bake them this year.
