Stout muffins

Since it is St.Patrick’s day I decided I restart my writing and my baking.

If you do not know by now I’m almost Irish or at least in my mind I’m. 


We all know that meat prepared with stout or any kind of beer tastes really rich and juicy, this applies also for cakes apparently.


I did my thorough research and mixed and matched as usual a recipe especially for you.


Here it is.




You will need:


3/4 cup cocoa powder

1 1/2 cups of sugar

1 1/2 cups of flour

pinch of salt

1 tsp. baking powder


115 gr. melted butter

275 ml. irish stout

300 gr. sour cream

3 large eggs






Super simple, lovely people.

Take one bowl and mix all of the dry ingredients. Stir them well and set aside.


In another bowl mix with an electric mixer the melted butter with the beer. Add the sour cream. Add the eggs one by one. Mix until everything is of the same consistency.



Then stir the dry ingredients with the wet ones. And done.


Line two muffin pans with muffin cases and divide the dough between them.



Toss the muffins in a pre-heated to 160 C oven for about 12 minutes.


Let them cool completely and if you fancy serve the with a dollop of crème fraîche mixed with a drop of mint extract – not necessary but gives it a fresh kick.




So as my dear friends say  “There are only two kinds of people in the world. The Irish and those who wish they were.”, I’m most definitely from the second category.


And besides all the green mountains the good beef, cheese, lamb and the ocean Irish medical advisors recommend 2-3 alcohol units per day for the ladies and 3-4 for the gents. Meaning almost 1,5 l. beer per day Recommended!!!



There is a reason obviously…
