Strawberry custard tart

I was holding back on strawberries, because as my imaginary friend Jamie Oliver says everything is better in season.

Until recently we had snow in here and how do you think of spring and strawberries when outside it is freezing cold. I held back and did not buy any, not because I did not wanted, but cause I thought it was wrong. I sustained, if you did not manage, then maybe next year.


I have a great fruit and veg guy, but this is a matter of other discussion, he had great bad boys from Italy and I could not resist this time. So it is strawberry tart time.


Tart not cake, because I do not enjoy cooked strawberries, this is not a jam, people.



You will need:


300 gr. strawberries


for the crust



100 gr. cold butter

50 gr. oats

150 gr. whole wheat flour

pinch of salt

2 tbsp. sugar

splash of water


for the custard


500 ml. milk

3 tbsp. flour

3 tbsp. sugar

1 egg yolk

vanilla extract






In short make a shortcut pastry as always with the butter rubbed into the flour, the oats, add in the sugar and  salt. 

 Mix in the egg and if the dough does not come together add a splash of ice water.



Roll it out and toss in the oven for about 35 min. on 170 C.


In the mean time make the vanilla custard.

Pour in a small pot washed with water almost all of the 500 ml. In a small bowl mix the rest of the milk with the flour, sugar and vanilla extract. Make sure they are no lumps. Put the pot with the milk on high heat until it foams then lower the heat and add the custard base stirring constantly with a wired whisk.


Let it bubble until it thickens and you are ready.

Leave to cool down or toss in the fridge for 10 min.



When the tart base is baked leave it to cool or if you are in a hurry put it in the fridge also for 10 minutes.



Now the finishing touch.


Wash the strawberries and cut them in half.


Take the tart base and and pour a generous amount of custard on it, spread a little to even it out. Arrange  the strawberries on the top and you are good to go.



Even if do not make the tart pretty-looking, it will go so fast that you will maybe need to make another one the next day.
